Volcanos Steakhouse at Pacific Werribee is preparing to open its doors, bringing the popular restaurant group to one of Melbourneβs major shopping and entertainment destinations.

Volcanos already has firsthand experience with the realities of a busy kitchen, including high-volume services, staff training, cleaning, maintenance and producing a consistent result across every location.
For the Werribee venue, the team chose quality commercial equipment based on products that had already performed well across its previous restaurants.
There is real value in that familiarity. Staff can work with equipment they understand, the kitchen can maintain consistency between locations and the operator can approach opening with greater confidence.

A smarter alternative to the original conveyor oven

Using proven equipment did not mean every item on the original equipment schedule had to remain unchanged.
One of the most important decisions involved the conveyor oven.
The original option came at a higher cost than the venue needed to pay. After reviewing the kitchenβs requirements, Mattys recommended a Zanolli conveyor oven as an alternative.
The Zanolli offered the quality and performance required for the application while delivering a worthwhile saving for the client.
This was not about replacing a quality product with the cheapest available option. It was about understanding what the kitchen genuinely needed and finding a comparable solution without adding unnecessary cost to the project.
Every dollar invested into a new restaurant has another potential use. A well-considered equipment saving can free up capital for construction, staffing, marketing, additional equipment or the many unexpected costs that come with opening a venue.
Why an equipment schedule should be questioned
A commercial kitchen equipment schedule should not be treated as a shopping list that cannot be challenged.
Some products justify a higher investment because of their capacity, durability, service support or importance to the menu. Other items may have credible alternatives that deliver the required result for less.
