At the heart of the Galassia PN120 is a control panel that provides precise management of the kneading process, enabling bakers to set the speed and time for manual, semi-automatic, or automatic operation, ensuring the desired dough consistency. This model features two independent motors one for the spiral shaft and another for the bowl shaft allowing for higher revolutions per minute and separate control over their speeds. This design delivers unmatched power and torque, making it capable of handling even the toughest mixes. The forged axle, positioned under the head cover, rotates the spiral, amalgamating, mixing, refining, and oxygenating the dough effectively. The opposing rotations of the spiral and bowl work in harmony to oxygenate the dough and develop a strong gluten network, essential for achieving the ideal texture in bread. Additionally, the mixer has a reverse function that allows users to reverse the direction of rotation of the bowl to accelerate the mixing of ingredients and enable easy dough emptying.

Product Description

The Zanolli Ercolina Plus Auto 11 is a fully automatic dough divider and rounder that takes the time consuming, sensitive job of portioning and rounding dough out of operators' hands. Pressing, cutting and shaping are all programmable, so staff load the dough, press a button and the machine handles the rest, cutting each batch into 11 identical portions from 180g to 500g.

Each phase can be fine-tuned on a knob with parameters shown on a digital screen, and multiple programs can be saved for different doughs. The pressing plate and cutting blades are stainless steel, the frame is electro-welded painted steel, and the basins are anticorodal anodised aluminium with food-safe polyethylene inner surfaces. It handles dough loads of 2 to 5.5kg and can produce up to 1300 dough balls an hour.
