The Baratta BMT-100 Electric Mixing Bratt Pan is a 110-liter unit designed specifically for the rigorous demands of professional kitchens and food processing facilities. Engineered for heavy-duty performance and exceptional durability, it is constructed entirely from high-quality AISI 304 stainless steel. The tank is crafted from marine-grade AISI 316 stainless steel, providing superior corrosion resistance and thermal efficiency—especially beneficial for cooking acidic ingredients. The lid, also made from AISI 304 stainless steel, features a special balancing device for easy opening and enhanced durability. The BMT-100 also features an electric tilting mechanism powered by a robust gear motor, allowing for effortless emptying of the tank and its contents while minimizing manual effort.

This unit is equipped with best-in-class insulation layers that minimize heat loss while optimizing energy consumption and yield. The cooking base, made from thick AISI 316 marine-grade stainless steel, guarantees optimal cooking results, along with superior thermal efficiency and long-lasting durability, even when preparing acidic foods. The BMT-100 features direct electric armored heating elements powered by a 13.5 kW system, providing precise temperature control located directly beneath the cooking base. Temperature management relies on two systems: the first uses a core probe and electronic thermostat, which ranges from 50°C to 220°C, to control the temperature of the products being cooked in the tank. This core probe, positioned along the side of the tank walls, accurately monitors the product temperature and continuously adjusts it to ensure consistent cooking results.

The second probe measures the actual cooking surface temperature at the bottom of the tank, adjustable from 50°C to 300°C, ensuring perfect braising outcomes. This multi-layered temperature system guarantees optimal performance for both delicate dishes and high-heat tasks, ensuring that every part of the product is perfectly cooked. Additionally, built-in safety controls are included to prevent overheating.

The electronic components are of the highest quality available, and the three-phase power supply features a control device that halts the machine in the event of phase inversion, activating a warning lamp for added safety.

The bratt pan is fitted with mixing arms that feature food-grade Teflon scrapers on both the bottom and sides, ensuring thorough mixing and preventing food from sticking.
