The Zanolli Sirio 600/1600 VAR Auto Cut is a freestanding floor model pastry dough sheeter on wheels, built to roll dough into thin, wrinkle free sheets and then cut it automatically into shape. It uses two synchronised 1600mm x 600mm belts that fold away when not in use, and an inverter controlled variable speed motor runs on a single phase 10A plug, giving full control of belt speed for different products.

A mounted cutting assembly with customisable moulds for shapes such as croissants and donuts engages once the dough reaches the set thickness, saving labour and lifting throughput. Thickness is adjustable from 0.2mm to 35mm with a digital display, a joystick for smooth belt movement, a speed dial, and standard left and right foot pedals. The 70mm rolling pins are heavy duty stainless steel, with removable dough scrapers, flour tray and safety guard.
