The Zanolli Galassia 12VAR is a fixed head, fixed bowl spiral dough mixer with variable speed control, powered by a three phase motor that runs through inverter technology so it can plug into a standard 10 amp single phase outlet. It kneads up to 12kg of finished dough in a 16 litre bowl and uses the same heavy duty stainless steel spiral and bowl construction as the rest of the Galassia range.

Variable speed lets operators fine tune the mix for different dough types and hydration levels up to 55%, while the fully chain driven, gearbox free transmission adds strength and durability. Standard features include a timer control, electromechanical controls, a clear ABS safety guard and heavy duty lockable castors.
