The Zanolli Ercolina Plus Auto 15 is a fully automatic dough divider and rounder that takes the time consuming, sensitive job of portioning and rounding dough out of operators' hands. Pressing, cutting and shaping are all programmable, so staff load the dough, press a button and the machine handles the rest, cutting each batch into 15 identical portions from 150g to 360g.

Each phase can be fine-tuned on a knob with parameters shown on a digital screen, and multiple programs can be saved for different doughs. The pressing plate and cutting blades are stainless steel, the frame is electro-welded painted steel, and the basins are anticorodal anodised aluminium with food-safe polyethylene inner surfaces. It handles dough loads of 2.2 to 5.4kg and can produce up to 1800 dough balls an hour.
