The Zanolli TAE61SH is a combined baking tower bringing together the Teorema Anemos convection oven and Teorema Polis deck oven in one compact footprint. It stacks a 6 tray touch controlled convection oven above a single deck 2 tray bakery deck oven, with both units mounted on a heavy duty mobile stand rather than a prover, for kitchens that need the ovens without the leavening function.

The 6 tray Anemos convection section uses a bi-directional twin fan system with adjustable humidity from 10 to 100 percent, core probe cooking, and a touch panel storing up to 147 recipes with automatic self-cleaning. The 2 tray Polis deck oven below adds a thick refractory stone deck reaching 400 degrees Celsius with 20 programmable cooking settings, all supported on a mobile stand for easy repositioning.
