The Irinox MultiFresh Next M Excellence is a mid-size blast chiller and shock freezer that delivers the complete range of MultiFresh Next capabilities in a practical mid-capacity format. The first machine in the world able to run operating cycles from +85°C to -40°C, it can blast chill, shock freeze, proof leavened doughs, thaw, regenerate, pasteurise and cook at low temperatures. The Excellence model includes the full function set, all accessible from the 10-inch touch screen interface. It uses a fully programmable Green R290 refrigeration system and an adjustable racking system compatible with GN 1/1 and 600x400mm bakery trays. All MultiFresh Next cycles have been calibrated in cooperation with professional chefs, confectioners and bakers to ensure optimal temperature, ventilation and humidity for each food type.
